Sorry, I can't help you much more, I don't have one of these DAC's to experiment with. Even so, just a few points...

This should not be needed, a reboot should set everything up correctly. If that is not happening, there is something significantly wrong.
If you have 3.5mm jack enabled, you could try switching ON each audio card in turn, finally selecting the Piano DAC. This sometimes clears problems.
In mpd.conf, the line '
format "176400:24:2"' should not be there, delete this line or use something like this: '
format "*:24:*"'. The 176400 will invoke SoXr to do resampling most of the time, this will reduce the sound quality. The 2 forces stereo output, this may conflict with your dual mono setting. The 24 is not normally a problem, but if you have music which is encoded @32bit it will reduce the quality, the DAC chip will process 16, 20, 24 and 32bit signals automatically without this setting. Personally, I don’t see any reason to include the format clause in the alsa output section.
And finally, a question, which outputs are us using when dual mono mode is selected? I suspect that you need to use red and red (or white and white).
