To modify resolution for the screen you need to log in with SSH and modify /etc/X11/xinit/start_chromium.sh with the command:

nano /etc/X11/xinit/start_chromium.sh
The line which needs changing looks like this:

chromium --app=http://localhost --start-fullscreen --force-device-scale-factor=1.8
For a 2.5 inch screen you should modify it to look something like this:

chromium --app=http://localhost --start-fullscreen --force-device-scale-factor=.5
And for a 7 inch screen it should look something like this:

chromium --app=http://localhost --start-fullscreen --force-device-scale-factor=.7
Use <ctrl>O then <ctrl>X to save the changes or just <ctrl>X to exit without changing the file.
You may need to experiment with other values of the scale-factor to get it perfect. I am not sure how many decimal places are supported.
A reboot is required to activate the new settings.
